Pumpkin Spice Cake Bites

I’ll be honest, I am not typically the most enthusiastic passenger on the “Pumpkin Spice” train. Still, I was intrigued when I saw our grocery store roll out some Pumpkin Spice Pudding mix this September. (I am sure they have had it in previous years as well, but I was probably ignoring it.) My grocery store does not have pumpkin cake mix stocked on the regular, so I decided to stick with a spice cake mix. This recipe has more of a spice cake flavor, with a present but not overpowering bit of pumpkin flavor from the buttercream that binds that cake bites together. Enjoy and Happy Fall!

Pumpkin Spice Cake Bites



Cake

  • 1 Box Spice Cake Mix

  • 1 Cup Milk (or amount listed on cake mix package)

  • 3 Large Eggs (or amount listed on cake mix package)

  • ⅓ Cup Vegetable Oil (or amount listed on cake mix package)

Buttercream

  • ½ cup cream cheese (4 oz)

  • ¼ Cup (half of one stick) unsalted butter

  • 1 box pumpkin spice pudding mix (3.4 oz box)

  • 1/2 Cup Powdered Sugar

Chocolate Coating

  • 3 Cup White Chocolate Chips
  • 2 tbsp Vegetable Oil
  • 1 tsp Pumpkin Pie Spice/Extract

Preparation

  1. Bake the cake according to package directions. If the box calls for water, replace it with an equal amount of milk.

  2. Prepare the buttercream. Cream the cream cheese and butter until fluffy. Add the pudding mix and powdered sugar and beat until smooth. 

  3. Form the cake bite rounds. Put the cake into a bowl and add two tablespoons of buttercream. Mix together thoroughly. Form the mixture into small rounds and place on a baking sheet. Freeze for 1 hours minutes. 

  4. Prepare the chocolate coating. Melt the white chocolate or candy melts and oil in 20 second increments. Once smooth, add the Pumpkin Pie Spice or Extract.

  5. To coat the cake bites use a piping bag (or a Ziploc bag with the corner cut off) to pipe the chocolate onto the truffles. Alternatively, you could dip the truffles directly into the chocolate. 

Tips

These cake bites have a more subtle pumpkin spice flavor. If you are looking for a more “in your face” amount of pumpkin, consider using a pumpkin cake mix as your base. 

If you find it difficult to roll the cake mixture into rounds, use a tablespoon or mini cookie scoop to help.
