Fudgy Baileys Brownies

I think we could all agree that there is never a bad time to have a brownie. Whether fudgy or cakey, they can make a crummy day good or a good day even better. I myself tend to switch back and forth between a preference for fudgy or cakey, but I felt that fudgy texture would be best for our Bailey’s Cream Brownies. 

There is Bailey’s not only in the brownie itself, but also in the rich ganache that goes on the top. I made these once and quickly realized that next time I would need a double batch! Enjoy!!

Fudgy Baileys Brownies

Ingredients

  • 3 eggs

  • 1 stick + 3 tbsp salted butter

  • 1 cup brown sugar

  • ½ cup white sugar

  • ⅔ cup all-purpose flour

  • ¼ cup cocoa powder

  • 2 tsp vanilla extract

  • 2 cups semisweet chocolate chips (divided)

  • 1 ½ cup Baileys Irish Cream  (divided)

Preparation

  1. Preheat the oven to 325 degrees.

  2. Place 1 cup of the chocolate chips in a large bowl and set aside. 

  3. In a large skillet, combine the brown sugar, white sugar, and ½ cup of the Baileys. Cook on  heat until the butter is melted and the sugar is mostly dissolved. 

  4. Remove from heat and pour the mixture over the chocolate chips in the large bowl. Allow to set for 2-3 minutes before stirring until all of the chocolate has melted.

  5. Allow the mixture to cool so that it is warm but not hot. Prepare your baking pan with either baking non-stick spray or parchment paper while the mixture cools.

  6. Add the eggs one at a time, stirring constantly. Add the vanilla.

  7. Add the cocoa powder and flour and mix until combined. 

  8. Pour the mixture into the prepared pan and bake for 25 minutes. 

  9. While the brownies are cooling, heat the other 1 cup of Baileys on medium heat until it is just starting to simmer. 

  10. Remove from heat and add the remaining 1 cup of chocolate chips. Let it set for 2-3 minutes before stirring until all of the chocolate chips are melted.

  11. Pour the mixture over the brownies. Cool in the refrigerator for at least 25-30 minutes to allow the ganache to set. 


Tips

Semisweet or dark chocolate chips are recommended for a richer brownie.

This recipe is best suited for those who want a fudgy brownie. 

Salted butter is recommended, but you can add ½ tsp of salt if you use unsalted butter.
