Brownie Cookie Sandwiches w/Nutella Filling

 


Ahhh Nutella. Whether used in baked goods or eaten right out of the jar, there’s a certain type of craving that only Nutella can satisfy. These brownie cookie sandwiches come together in a pinch and deliver both the fudginess of a brownie and the crunchy edges of a perfect cookie.

Brownie Cookie Sandwiches w/Nutella Filling

Cookies

  • Brownie Mix (18 oz box)

  • 2 eggs

  • ¼ cup oil

  • ¼ cup Nutella or other hazelnut cocoa spread

Filling

  • ⅓ cup shortening

  • ⅓ cup marshmallow fluff

  • ¾ cup Nutella or other hazelnut cocoa spread

Preparation

  1. Preheat the oven to 350 degrees. 

  2. In a large bowl, combine the brownie mix, eggs, oil, and ¼ cup of Nutella. Beat with an electric mixer on medium speed for about 60-90 seconds.

  3. Form the cookie dough into balls and place them on a parchment-lined  cookie sheet leaving two inches of space in between each cookie.. Use 1 ½ -2 tbsp of dough per cookie.

  4. Bake the cookies for about 10-12 minutes. Allow to cool completely.

  5. For the filling, beat the shortening, marshmallow fluff, and ¾ cup of Nutella until well combined and smooth.

  6. Use the filling in between the brownie cookies once they have completely cooled.

Tips

If you like a decently sized cookie, this recipe will yield about 6-8 cookie sandwiches (12-16 cookies before they are put together). If you are bringing these to a larger gathering,  you should consider making double.

These cookies get a little crunchier after they cool, so take them out of the oven when they still look slightly under baked.
